Dexter Beef

The Dexter is a small Irish cattle breed that gives fine-grained marbled beef and a really beefy taste. The Dexter is the ultimate slow-food, taking 2-3 years to mature. The smaller size and slow growing characteristics of the breed means that it is not very common in farms or shops, due to the focus on bigger cuts and fast growing animals rather than quality.

Our Dexters are born and bred at Nicole Davidson’s farm near Casterton in the Western District of Victoria and finished for over two years at our farm. We age our beef for 14-21 days for tenderness and taste.

Wiltshire Lamb

The Wiltshire originated in England and most likely descended from the Mediterranean long before that. The Wiltshire is purely bred for meat and does not produce wool. During the warmer months, the Wiltshire sheds its coat meaning that the breed is easy care and requires minimal handling. The Wiltshire copes well with Australian conditions and is naturally suited to being grass fed. The Wiltshire gives a beautiful full flavour meat.

Our Wiltshire Lambs are born and bred on our farm during Winter and are seasonally available the following Autumn.

Package & Delivery

Packaging: Our meat is processed at our butcher and cuts are packaged individually in cryovac packages.

Delivery: We deliver to Melbourne, Ballarat and Geelong for no extra charge.

Storage: Cryovac-packed cuts will keep in the fridge for up to 2 weeks and in the freezer for up to 6 months. The size of the each delivery box depends on your order, and our Big Box is about the equivalent in size to 4 large loaves of bread, so the contents should fit in a family kitchen freezer.
